Sustainability in the Foodservice Industry: Reducing Ecological Footprints
March 1, 2023How to Get the Most Out of Your Commercial Shelving
May 29, 2023As of December 2022, the manufacture and sale of single-use plastic containers are banned in Canada. The Single-use Plastics Prohibition Regulations (SUPPR) prohibits plastic shopping bags, single-use cutlery, and food service ware—including cups. SUPPR is a part of the government’s larger goal of eliminating plastic waste from Canada by 2030.
To comply with the new regulations, restaurants may need to switch to reusable drinkware for outdoor patio service. While this may require some upfront investment, it can also provide long-term cost savings and environmental benefits.
Cost considerations
The cost of drinkware depends on factors such as the quality of the materials, design, brand, and quantity being purchased. Initially, buying reusable glassware costs more than purchasing single-use cups. But over time, that initial investment turns into savings since food buyers no longer need to keep re-buying plastic cups.
So, what type of outdoor drinkware should you choose?
Glass vs. Acrylic
Consider the ambiance of your restaurant when choosing glass versus acrylic. Also, remember to factor in the cost of breaking and replacing drinkware in your choice.
Glass
Glass drinkware is classic for restaurants for a variety of reasons. Many glass drinking vessels are classy, functional, and heat-resistant enough for the dishwasher. Generally, glass cups are more expensive than acrylic.
If you’re looking at glass vessels, here are three solid choices:
Steelite – Known for its quality, Steelite glassware features many creative shapes and textured models. While it may require initial investment each glass is made to last beautifully withstanding service over time.
Libbey – Libbey produces a glassware that is dishwasher-safe, affordable, and features classic design options, making this brand a restaurant favorite.
Arcoroc – Another affordable option, Arcoroc is known for being heavy-duty, crafted specifically for the commercial market to withstand heavier abuse.
Acrylic
In general, acrylic drinkware is often cheaper than glassware of comparable quality because acrylic is a less expensive material to produce. However, some high-end acrylic drinkware may be more costly than lower-quality glassware. In addition, acrylic is more durable than glass and is break-resistant.
Acrylic brands to consider:
Cambro – Cambro is one of the most trusted names in commercial kitchens and has been producing break-resistant containers for many years.
G.E.T. – G.E.T. is known for producing a wide range of high-quality acrylic drinkware at an affordable price.
Steelite Aspen – Made of a virtually unbreakable polycrystal material, this latest innovation has the look and feel of real glass but is designed to withstand the rigors of foodservice.
Care factors to consider
A lot of acrylic drinkware is not dishwasher safe—even if labeled as such. Over time, heat and detergent will weaken acrylic glasses, causing them to break more easily. So, it’s safest to wash acrylic vessels by hand.
Glass drinkware is typically dishwasher safe. That said, glass is more fragile than acrylic, so greater care must be taken when washing, storing, and transporting drinkware, especially outdoors, to avoid breakage.
For both types of glassware, you will want to instruct your dishwashers and kitchen staff to regularly inspect the cups for chips, scratches, or cracking. Damaged drinkware should be removed and replaced immediately.

Acrylic barware that feels like traditional glassware
Some customers may prefer a barware option that feels like conventional glassware. Below are some types of materials that provide a glass-like feel:
- Tritan Acrylic: BPA-free, shatterproof, and dishwasher-safe, Tritan acrylic barware is popular in upscale bars and restaurants due to its clarity and durability.
- Polycarbonate: Polycarbonate is also a popular option for barware because of its glass-like clarity and feel. Polycarbonate barware is ideal for outdoor and poolside bars where traditional drinkware is impractical.
- SAN (Styrene Acrylonitrile): SAN plastic is a durable and versatile material widely used in various industries.
- Crystal Clear Acrylic: Crystal clear acrylic is a high-quality plastic with a glass-like appearance and feel. It is often used in upscale bars and restaurants for serving high-end cocktails and spirits. It is also shatterproof and dishwasher safe, making it a practical option for busy bars.
- Glassware Coated with Polypropylene: Some glassware manufacturers produce cups coated with a layer of polypropylene, which gives the vessel a shatter-resistant property. This coating does not change the texture or feel of the glass and creates a durable option for upscale bars and restaurants.

Additional items to consider
In addition to glassware used for outdoor and patio service, other items can be replaced with acrylic in a restaurant setting. Here are a few examples:
- Children’s glasses: Many restaurants offer special glasses for children, such as plastic cups with lids and straws. These glasses can also be made from acrylic, which is durable and safe for children.
- Serving Items: Restaurants that offer buffet or catering services may want to consider using acrylic glassware for pitchers, bowls, decanters, and serving platters. These items are often subject to frequent handling and transport, which can increase the risk of breakage.
- Decorative items: Some restaurants use glassware, such as vases or centerpieces, for decorative purposes. Acrylic items can be a safer alternative, as they are less prone to breakage and are customizable with the desired restaurant aesthetic.
