Due the situation of COVID19 (Coronavirus) constantly changing and resulting in many establishments needing to temporarily close, it is important to make sure your kitchen is shut down properly. With the current crisis we are trying to prevent stress on healthcare infrastructure, similarly we must also try to prevent stress on your restaurant equipment to ensure easy re-opening once things get back to normal.
Once your kitchen staff have cleaned and sanitized all cooking equipment, here is a check list of other things that need to happen for a proper shut down:
- Shut off all gas supplies to equipment
- Shut off breakers and electrical supply to equipment
- Prop open all doors properly
- Shut off all water sources
- Drain water filtration systems
- Flush beverage lines and cap where necessary
- Engage sink shut offs
- Fryers and Pump systems properly sanitized
- Empty refrigeration, turn off units and prop doors properly for air flow
- Walk in freezers should not be shut off
- Flush dishwasher chemical lines
Plus, be sure to drain water from equipment as needed to inhibit bacterial growth, including:
- Coffee Machines
- Dishwashers
- Steamers
